Bistro An in Prague 6 resembles an Asian street where the beef broth cooks for eight hours and the space is always filled. Bistro An is a new business that was opened by the Tranova family at the end of last year. It is located at a short distance from Hradčanská metro station in Prague 6 and, like the older branch at Jiřího z Poděbrady, specializes in traditional Vietnamese cuisine. Unlike the older branch, the food here doesn’t have to be eaten from a stand. The interiors reminiscent of Hanoi’s raw atmosphere is inviting for anyone to take a seat. The Tranova family previously found the famous business Pho Vietnam Tuan & Lan on Jiřího z Poděbrady and later Botanica Coffee Truck in Vršovice. At the beginning of September, the family’s parents left Botanica to a new owner and passed Bistro An down to their son. “After more than 30 years of hard work, my parents finally decided to take a well-deserved retirement. I have always admired them and I will always admire them. I still don’t understand how they managed to build so much from nothing while being my parents, grandmother and grandfather, and kind people. I am sincerely proud...
You can find the Triton restaurant in a stalactite cave built under Wenceslas Square in the basement of the Adria Hotel. The restaurant exhibits so-called gastronomic art. The dishes surprise not only with their taste, but also with their visual appearance and interesting story. The kitchen of this exceptional establishment is run by the young and talented chef Tomáš Kohút. Inspiration for his dishes comes from classic Czech cuisine and he transforms them into elegant and ultra-modern versions. Let’s introduce some of them… Original menu One of the appetizers, the unique zavináč, is outstanding. Unlike its pub model, the dish will surprise you with the delicate taste of pike perch marinated in Prosecco vinegar and an impressive accompaniment in the form of cashew nut puree, bacon and fish broth. The colorful combination of flavours is garnished with fish skin chips, red pepper gel, sour kefir, and dill sauce. The second course is a variation of fried cauliflower, which is transformed into a liquid version in the form of cauliflower cream flavoured with apple cider vinegar. The chef serves it with a honey biscuit and duck prosciutto. As the main course, a very imaginative and bold presentation of the dumpling-pork will...
Czech Carnival is incomplete without the traditional sweet treat “Angel Wings” (Boží milosti). This delicate, crisp, and light pastry has been a staple at carnivals for centuries and is a symbol of good luck and joy. These pastries used to be prepared by Czech grandmothers and great-grandmothers and are today mostly made in Moravia. Angel Wings are made of paper-thin layers of buttery dough, which are then shaped into crescent shapes and deep-fried to perfection. The crispy exterior gives way to a soft and fluffy interior that melts in your mouth. They are often sprinkled with powdered sugar or drizzled with honey to add a touch of sweetness. The origins of Angel Wings are said to date back to the 16th century when the pastry was first made in the monasteries of Bohemia and Moravia. At the time, the nuns used the crescent shape to symbolize the “wings of angels” and served the sweets to the poor as a symbol of charity. Making Angel Wings is a labor-intensive process that requires skill and patience. The dough is made by mixing butter, flour, sugar, and eggs, and then rolling it out into thin sheets. The sheets are then cut into crescent...
The Czech Republic could lose Michelin-starred restaurants, as individual countries must now pay Michelin a fee of CZK 10 million over three years. Michelin, which has been publishing the guide since 1900, plans to contract with state agencies to help finance it. In the Czech Republic, the agency is CzechTourism, but the final decision on whether the state will pay the amount rests with the Ministry of Regional Development. “It is in the interest of the organisations that the guide stays in the Czech Republic. Of course, we as an agency advocate to support gastronomy, but I cannot say anything else at this moment,” Jan Herget, director of CzechTourism. The Ministry of Regional Development is still evaluating the situation and will consult the fee with other ministries, added Petr Waleczko, deputy head of communications and PR manager of the cabinet of the Minister of Regional Development. Most countries, such as Hungary and Slovenia, have already signed the agreements, but the Czech Republic is still hesitating. The Czech Republic now has two restaurants with one Michelin star – Field and La Degustation Bohême Bourgeoise. Michelin has not yet issued a recommendation for the Czech Republic for last year, as this year’s...

Lunches in the Czech Republic have risen in price by a fifth in a year. Over the past year, the cost of lunch in a restaurant has increased by CZK 29, or 19 percent. While in December 2021 the average lunch cost CZK 151.20, in December 2022 it rose to CZK 180.40. This is based on payments made with Gastro Pass Cards from Sodexo Benefity, a provider of corporate benefits in the Czech Republic. The most expensive lunch bill in the last month of last year was registered in Prague, at CZK 203.5. On the other hand, the cheapest lunches were in Vysočina and Ústí nad Labem, where the price exceeded CZK 161. You can eat for less than the Czech average of CZK 180.40 in only six regions. Which ones are they besides Vysočina and Ústí nad Labem? Find out more in our map. The main reason for the increasing prices is naturally the rising prices of raw materials, rents, energy, but also the wages accompanied by a shortage of labour in the catering industry. “While since the beginning of last year prices have increased by a maximum of two crowns month-on-month, in September there was a jump of...
Dršťková Dršťková is a traditional Czech tripe soup consisting of beef tripe braised in generous amounts of onions and sweet paprika. Although it has numerous regional varieties, this hearty soup typically has a thick consistency, a light red color, and a slightly spicy flavor. Occasionally, pieces of smoked meat or sausages are incorporated into the soup. Tripe soup is often served in traditional pubs and usually comes accompanied with slices of crispy buttered bread. In Slovakia, it appears in a similar form and is better known as držková polievka. Křížaly This popular Czech snack is prepared with pitted and sliced apples that are slowly air-dried or dehydrated in the oven. Depending on the size and cut, their texture varies from thin and crispy to thick and chewy. Although they are most commonly enjoyed as a quick and healthy snack, křížaly can be used as a nutritious addition to porridges and various desserts, or as festive Christmas decorations. Tuzemák This traditional Czech drink was invented in the 19th century as a substitute for the original Caribbean rum. It is usually distilled from potatoes or sugar beets to create a base that is then enriched with rum essence. The drink was initially...
Fancy some buuz, khuushuur, or tsuivan? Head to Letná to have a taste of these authentic Mongolian delights. These dishes are served by a man with an equally tongue-twisting name – Dashnyam Boldsaikhan who has fulfilled his lifelong professional dream, and thanks to him, you can taste Mongolian dishes in Prague. But first of all, let’s explain what are these dishes. Buuz is a type of steamed dumpling filled with hand-chopped meat; khuushuur is a classic guilty pleasure, something like a Mongolian langos, dough fried, filled with meat, and typically eaten warm with your hands, while tsuivan is a dish of homemade noodles. Those looking for outright gastro-exoticism should try banshtai tsai, traditional salty Mongolian tea with ghee and meat dumplings. “I’m very satisfied. When you cook a meal, bring it to the table, and people enjoy it, that’s the best feeling,” says Boldsaikhan, also known as Boogi, the owner and head chef of UB Restaurant. The abbreviation UB stands for the Mongolian capital Ulaanbaatar. Simplicity is key – even the dishes from the vast land of Genghis Khan’s descendants are actually simple. Food is a reflection of the national soul, and the former nomads logically didn’t have much time...
